This Cabernet Franc has a hint of Bing cherry aromas, as well as red apple, caramelized sugar, pink rose and a hint of spice.  Flavors of peppercorn and cherry vanilla cola with the structured tannins make this wine a good pairing partner with a steak dinner or a simple charcuterie board.

This wine spends extra time on the skins (10 months), which develops unique flavors and aromas.  On the nose, you will find cherry, spices, wildflower honey, and plum.  The red fruit flavors and structured tannins allows this wine to pair well with grilled meats.  Enjoy!

Another Merlot has earned its way to the top of the class thanks to quality fruit from Austin Sharp Vineyard!  Aromas of pomegranate, sweet raisins and raspberry are balanced with vanilla and coconut.  The finish is complex, as it begins with cherry cola flavors, and continues by showcasing hibiscus, and vanilla cream covered fruits.  The medium tannins give the needed structure to pair this wine with grilled meats or chocolate covered strawberries.

Mochila Roja (translated Red Backpack) is a bold, rich red blend of Cabernet Franc (45%), Petit Verdot (45%) and Primitivo (10%). Carry with you this blend that embraces sweet strawberry aromas as well as ripe raspberry, oak influenced toasted coconut and a floral profile of hermosas Violetas y Margaritas. Black cherry, blackberry and strawberry flavors are what gives this wine a powerful character. Mochila Roja is a true reflection of dedication towards achievement and una inspiración for all to taste. Arison Vineyards contributed the Cabernet Franc and Petit Verdot that are the base of this wine.

Solicitude is a thoughtful wine that is perfect to drink in those stressful nights studying for exams, or even at the end of a taxing day, when you just need to destress for a bit.  It has aromas of black cherry and strawberry hibiscus, and it leaves you with a strawberry and cherry finish.  This wine is perfectly paired with chicken pasta and squash.

This wine is the perfect way to enjoy your Summer Break and seek relief after your classes are over.  Imagine yourself sipping wine in the perfect vacation destination.  It can be in Rome, at campsite listening to the flowing river, and even your backyard.  Summer Break is a perfect way to de-stress with the sweet aromas of red fruit, plum, a little twist of chocolate strawberries, and a smooth finish.  Sit back and enjoy your Vacaciones de Verano (Summer Break) with this wine.

This age-worthy wine earned its title of Super Senior from an extended maceration trail in our teaching winery, during which the wine was left in contact with the skins and sees long after fermentation completed. This process has been in practice since antiquity and is known to result in wines with more depth and structure by virtue of greater extraction time. With fruit donated from Gamache Vineyard in the White Bluff AVA, it had plenty of character to contribute straight from the vineyard site. High tannin and full body with notes of black cherry, cedar, and black currant make this a great food wine. Try pairing it with bacon-wrapped dates at dinner party or smoked brisket at a barbecue.

This wine has aromas of black cherry, blueberry jam, black currant, and notes of dried herbs. On the palate these delicate aromas are complemented by a medium body with impressive acidity and tannins. Tempranillo pairs well with many dishes like grilled meats, meaty vegetables, and smoky dishes.    

This oak Chardonnay was made from the excellent fruit that was harvested and donated to the YVC students from Austin Sharp Vineyard, in the Horse Heaven Hills AVA.  Aromas of cinnamon bark, caramelized sugar, yellow peach, piña colada, and green apple skin help this wine achieve great heights, like our upcoming graduates.  The tropical fruit and oak combine elegantly with flavors of toasted coconut, almond and vanilla; all leading up to a sweet cream and buttery finish.

Raise a glass to bold beginnings and well-earned endings with Graduate’s Last Hyrah, a Syrah-driven blend crafted by the winemaking students at Yakima Valley College. This wine is a tribute to a fitting send-off for those leaving the classroom for the workforce.

Brimming with dark berry richness and savory depth, this wine opens with aromas of blackberry compote, cracked black pepper, and a touch of violet. On the palate, it delivers layers of ripe plum, smoked meat, and subtle oak spice, framed by polished tannins and a long, smooth finish. This stainless-steel fermented Chardonnay has the aromas of tree and citrus fruit.  Fresh flavors of green apple, melon and guava meet your palate and deliver a crisp and dry finish.  Cheese and meat charcuterie, or a shrimp or chicken dish would complement the flavors of the terroir.

Classic Carbonic maceration is a winemaking process where whole cluster grapes ferment in a carbon dioxide filled sealed vessel. The compounds produced in this manner add some interesting flavors to the wine. This wine has also gone through some fantastic transformations, through blending, carbonic fermentation and ageing - much like experiments in a lab. With a lot of fruit characteristics, low tannins and a fresh finish, Carbonic Chemistry Lab will be a good accompaniment to any dish.

Often professors' grade on a curve, in the teaching winery students learn on one. This Academic Curve Rosé is a product of student winemakers taking classroom knowledge and applying it directly in the cellar. With notes of apricot, grapefruit and raspberry preserves, this Rosé reflects the experience, curiosity, and improvement that defines the journey from classroom to cellar. Just like the academic curve measures growth and progress, this wine is proof that the learning curve in the winery is just as real.
