2020 Super Senior Syrah

This Syrah is the epitome of the phrase “wine gets better with age.” It was left to macerate for 11 months on the skins leaving this bold and rich wine filled with dark chocolate, cherry blossom, and dark fruit flavors. One sip brings about lingering tannins with tea leaves, prune, raisin and floral flavors. It will pair nicely with the perfect charcuterie board of meats and cheeses, or a steak dinner. We hope you enjoy this specially made wine.

2021 Primitivo

Ripe flavors of cherry and blackberry are met with aromas of blueberry pie, plum and crème brûlée.  This wine has soft tannins and a flavorful finish of dark fruits and cola, mixed with some vanilla.  Pair this wine with chocolate covered fruits or a pork loin with a glaze sauce.

2022 Dean’s List Merlot

Another Merlot has earned its way to the top of the class thanks to quality fruit from Austin Sharp Vineyard!  Aromas of pomegranate, sweet raisins and raspberry are balanced with vanilla and coconut.  The finish is complex, as it begins with cherry cola flavors, and continues by showcasing hibiscus, and vanilla cream covered fruits.  The medium tannins give the needed structure to pair this wine with grilled meats or chocolate covered strawberries.

2022 Mochila Roja

Mochila Roja (translated Red Backpack) is a bold, rich red blend of Cabernet Franc (45%), Petit Verdot (45%) and Primitivo (10%). Carry with you this blend that embraces sweet strawberry aromas as well as ripe raspberry, oak influenced toasted coconut and a floral profile of hermosas Violetas y Margaritas. Black cherry, blackberry and strawberry flavors are what gives this wine a powerful character. Mochila Roja is a true reflection of dedication towards achievement and una inspiración for all to taste. Arison Vineyards contributed the Cabernet Franc and Petit Verdot that are the base of this wine.

2022 Solicitude -Lemberger

Solicitude is a thoughtful wine that is perfect to drink in those stressful nights studying for exams, or even at the end of a taxing day, when you just need to destress for a bit.  It has aromas of black cherry and strawberry hibiscus, and it leaves you with a strawberry and cherry finish.  This wine is perfectly paired with chicken pasta and squash.

2022 Super Senior Cabernet Sauvignon

This age-worthy wine earned its title of Super Senior from an extended maceration trail in our teaching winery, during which the wine was left in contact with the skins and sees long after fermentation completed. This process has been in practice since antiquity and is known to result in wines with more depth and structure by virtue of greater extraction time. With fruit donated from Gamache Vineyard in the White Bluff AVA, it had plenty of character to contribute straight from the vineyard site. High tannin and full body with notes of black cherry, cedar, and black currant make this a great food wine. Try pairing it with bacon-wrapped dates at dinner party or smoked brisket at a barbecue.

2022 Tempranillo

This wine has aromas of black cherry, blueberry jam, black currant, and notes of dried herbs. On the palate these delicate aromas are complemented by a medium body with impressive acidity and tannins. 2024 Mourvèdre Carbonic Chemistry Lab

Classic Carbonic maceration is a winemaking process where whole cluster grapes ferment in a carbon dioxide filled sealed vessel. The compounds produced in this manner add some interesting flavors to the wine. This wine has also gone through some fantastic transformations, through blending, carbonic fermentation and ageing - much like experiments in a lab. With a lot of fruit characteristics, low tannins and a fresh finish, Carbonic Chemistry Lab will be a good accompaniment to any dish.
